The one-man operation of the young Guillaume Gilles marketed his wines since 2007.
He produces wine in a traditional manner with minimal destemming, use of indigenous yeasts, and ageing in old demi-muids and casks.
It also helps that Guillaume Gilles tends a prime parcel in the Chaillot vineyard.
The largest and oldest part of his vines, including over 100-year-old Syrahs in the Peyrouses situation, took over Guillaume from the grandfather.
Guillaume operates elaborate vineyard work and focuses on minimalism in the cellar.

It’s precise, mineral and elegant Syrahs are produced in the smallest quantities and are already among the finest in the appellation.
Guillaume Gilles is a young winemaker located in the southernmost end of the Northern Rhone in Cornas.
