Sommelier diary #81

Silver Oak is a benchmark Napa Valley winery, founded in the early 1970s with a singular focus on Cabernet Sauvignon and a distinctive ageing regime in American oak. Its long-standing partnership with cooperages and commitment to extended cellar ageing have made Silver Oak a recognisable and enduring name in Californian fine wine.
The 1997 Silver Oak Cabernet Sauvignon is a mature, plush expression of a famously generous vintage, offering aromas of blackcurrant, blackberry and dried plum layered with coconut, vanilla, cedar and sweet tobacco. On the palate it is smooth and fully resolved, with softened tannins, modest acidity and a lingering finish of dark fruit, dill, spice and warm oak tones that underline its classic, unmistakable house style.
